What are the benifits of a preamp in a home theater setup?

For example, if a 5.1 channel reciever is only attached to two of the speakers, does it put out more wattage per channel?

No, typically most receiver only put out so much wattage to any given channel. This is not cumulative, it is per channel, so if a channel is not connected, it does not output more power to the connected channels. A "Preamp", in a home theatre receiver is usually used for a phono input. As most turntables only put out a very low amount of power.
